    7 oz. extra-firm tofu, pressed and drained
    1/4 C raw cashews, ground into a find powder
    1 T white rice vinegar
    1 T lemon or lime juice
    1 T white miso
    1 T mild-flavored vegetable oil


Place all ingredients in a blender or food processor and blend until very, very smooth and creamy. Keep refrigerated in an airtight container until ready to use. Should last up to a week. Yield 1 1/2 cups.
