Ingredients

    1 5.3oz Potato
    1 tbsp I Can't Believe It's Not Butter Lite
    2 tbsp Roberts Toasted Onion Dip
    .25 cup Crystal Farms Shredded Mild Cheddar Cheese

Directions

Preheat oven to 350 degrees
Scrub potato to clean off dirt
Poke potato with fork a few times
Cook potato in 350 degree oven for 1 hr
After the hour is up, take the potato out but leave the oven on. You'll need to use it again in a few minutes
Cut top third of potato off so the bottom two thirds looks like a boat
Dig out inside of potato with spoon and place insides in mixing bowl. Don't dig out to much, you want to keep the skin intact so you can put your potato, butter, dip mix back in
Set empty potato skin boat in baking dish
Mix ICBINB and dip with potato insides, mashing everything together
Scoop up the mashed potato mixture and put it back in the empty potato skin boat
Sprinkle the cheese on top of the potato
Put potato in baking dish back in oven for 15 minutes
After 15 minutes is up, remove potato from oven, let cool for a few minutes, and enjoy

    This recipe is super simple. I added about a Tbsp of ersatz bacon bits to up the flavor. Some salt and pepper helps too. I had some cheese left over, so at the end I butterflied the potato, added the rest of the cheese, and put it back in the oven (a toaster oven) to melt it. Delicious! - 12/14/20
