Filling and yummy tuna salad recipe. My mom always made this for us when we were growing up. My kids love this too! This recipe makes four open-faced sandwiches. I use light bread, so two open-faced sandwiches are only around 300 calories. Round this meal out with some carrot sticks. Filling and yummy tuna salad recipe. Ingredients

    Tongul Tuna - 365 Brand (1- 6 oz can in Water), 6 oz (get this at Whole Foods) You can actually use any type of water-packed tuna.

    Kraft Mayo Light Mayonnaise (Mayo), 1 tbsp
    Pickle Relish, 1 tbsp
    Hard Boiled Egg, 2 large
    Pepper, black, .25 tbsp

Directions

1) Hard boil the eggs. (cover two eggs with cold water, cover pan, heat to boiling, keep lid on pan, and turn off burner. Let the eggs cook in the hot water for 15 minutes. Remove pan from stove, drain water, and rinse eggs in cold water until they are cooled down).

2) Mash eggs in bowl.
3) Add tuna (drain it first), light mayo, relish and pepper. Mix well.
4) divide into four portions, and place each portion on 1 slice of light bread.
1 serving = 2 open faced sandwiches
