Introduction
Mashed potatoes made without all of the fat......my two children loved this recipe.....only eating for one now I can make this dish as small as I want. This recipe can be made for large groups as well. Ingredients

3 medium white or yellow potatoes (Idaho, yukon gold, red skin) ea potato should not weigh more than 5 to 7 oz ea
2 to 3 garlic cloves
1/4 to 1/2 cup of fat free chicken broth
1/2 to 1 pat of butter
seasonings (optional)
Directions
Preheat oven to 375
Wash and oil potatoes, prick holes around each entire potato, put in oven, remove when done
After removing potatoes, split potato down the middle the long way scoop out the inside of each potato
In small medium mixing bowl (preferably glass dump scooped potatoes, add butter, garlic and seasonings, mix well
Now add chicken broth, add as little or as much, depending on the consistency that you like.....now serve or cover until you decide to serve
THE RECIPE MAKES 2 TO 3 SERVINGS
*Note can be made to serve up to 7 or more people
