    Olive oil, 2 tsp.
    Ground bison meat, 0.5 lb
    Canned black beans, 2 cup
    2 Chipotle peppers in adobo, along with 2 tbsp adobo sauce
    Onions, raw, 1 cup, chopped
    Spinach, fresh, 6 cups chopped


Cook onions in olive oil until softened. Add bison meat and brown; stir in chiles, adobo, and beans, and cook until the beans are softened. Put in spinach, cover, and cook over lowered heat until the spinach is wilted.

Can be served on tortillas with reduced-fat cheddar cheese (not included in nutritional information).
