A light chicken and vegetable soup with bok choy cabbage added. Very yummy and a bit different. A light chicken and vegetable soup with bok choy cabbage added. Very yummy and a bit different.
Number of Servings: 4


    7 oz chicken tenderloins or chicken breast
    8 cups water (this can be swapped out for chicken broth-it will change the nutritional info)
    2 tsp chicken base powder

    2 med carrots
    2 stalks cerlery
    1 med onion
    2 tsp garlic (optional), seasoning to taste, pepper

    8 leaves bok choy cabbage (a chinese cabbage)


Combine chicken, chicken base powder (or chicken broth), and water. Bring to a boil and cook until chicken is cooked.

Chop vegetables to desired size. Cut or shred chicken. Combine all ingredients back in the pot with the water. Bring to a boil then cover and cook on low for 30 mins or until vegetables are soft.

Add chopped bok choy cabbage and boil for an additional 10 mins.

Makes approximatly 4 3 cup servings
*****I always make the no yolk added egg noodles on the side and measure my portion then add it to my soup. I then do the nutritional value for them.

*****This soup is also good with a little bit of red pepper in it or hot sauce, especially the cock sauce for those who know what it is.
