    1 tbsp oil
    1 onion finely chopped
    2 cloves garlic finely chopped
    1" piece ginger root, chopped
    2 tbsp coriander
    1 tsp tumeric
    400g tin tomatoes
    0.5lb mushrooms, sliced
    1 large potatoe, diced
    1 cup water
    0.5 tsp garam masala


Serves 4

-Heat oil in pan
-Add onion and cook for 5-10 mins til soft and browning
-Add garlic, ginger and coriander and stir well
-Add tomatoes, mushrooms, tumeric, pototato and water
-Bring to boil
-Reduce heat, cover and allow to simmer for 40mins, stirring occasionally
-Sprinkle with garam masala and serve
