Ingredients

    Corn tortillas, ground turkey, yellow sweet corn, refried beans (as a side dish) black beans, diced tomatoes and sharp cheddar cheese.

Directions

You can basically play with this any way you want to...my kids like to ensemble their own. Cook the turkey, drain any liquid, add in the rinsed black beans, diced tomatoes, corn, mix (I also add a packet of taco seasoning...which i didn't list here) Put it on either 1 or 2 corn tortillas...and I heat the tortillas up on an electric griddle...until the cheese that I grated on it is melted. If the cheese doesnt' melt if you have just one tortilla...you can always finish it off in the broiler. Add sour cream...guac...whatever!!! Skys the limit!
