    Carrots, raw, 6 large (7-1/4" to 8-1/2" long)
    Sweet Potato-Raw 5" Long, 2 serving
    Leeks, 1 leek
    Onions, raw, 2 slice, large (1/4" thick)
    Olive Oil, 2 tbsp
    Black Pepper


Cut carrots and sweet potatoes in large chunks, mix with diced leek and onion in 12 X 9 deep dish baking pan. Mix in oil add seasoning to taste.
Bake at 350C for 45 - 60 minutes
