    2 cups red skin potatoes
    1 carton chicken broth (32 oz)
    8 oz. cod
    1 can red beans
    1 can black beans
    12 tbl fat free sour cream
    Non-stick cooking spray

    sea salt
    fresh ground pepper
    lemon pepper seasoning
    garlic seasoning


Wash and Dice potatoes. Leave skins on for additional fiber. Add to slow cooker.

Rinse black and red beans under cool water until they're no longer frothy (it will make you less gassy). Add to slow cooker.

Chop fresh chives and add with additional seasonings to slow cooker along with chicken broth.

Season fish and sauteed with non-stick cooking spray until it flakes easily with fork. Add to slow cooker.

Add sour cream before serving.

Cook in slow cooker on higher heat for a few hours or lower heat to be ready for you when you get home from work!

Makes around 8 two-cup servings.
