Ingredients

4 tbsp corn oil
2 medium onions, sliced
4 garlic cloves, thickly sliced
1 lb skinless chicken breast fillets, cut into strips
1 tsp salt
2 tbsp lime juice (about one lime)
3 fresh green chillies, chopped
2 medium carrots, cut into batons
2 medium potatoes, peeled and cut into 1/2 inch strips
1 medium zucchini, cut into batons
4 lime slices
chopped fresh cilantro (optional)
fresh green chillies, cut into strips (optional)
Directions
1) Heat the oil in a large karahi, wok, or deep pan. Lower the heat slightly and add the onions. Fry until the onions are lightly browned.
2) Add half the garlic slices and fry for a few seconds before adding the chicken and salt. Cook everything together, stirring, until all the moisture has evaporated and the chicken is lightly browned.
3) Add the lime juice, green chillies, and all the vegetables to the pan. Increase the heat and add the rest of the garlic. Stir-fry for 7-10 minutes, or until the chicken is cooked through and the vegetables are just tender.
4) Transfer to a serving dish and garnish with the lime slices, fresh cilantro and green chilli strips, if desired. Serve immediately.
Makes 4 very generous portions.
