    1 cup uncooked oatmeal (old fashioned oats)
    1 cup 1% cottage cheese
    6 egg whites
    1 Tbsp vanilla extract
    1 Tbsp ground cinnamon
    1Tbsp Splenda
    1/2 tsp baking powder


Mix all ingredients in a blender foe 2-3 minutes. Pour into a hot skillet and cook. Flip when bubbles are coming throgh the top. 1 pancake is one serving. Makes about 5-6 pancakes. Store in freezer bag in the fridge for serveral days.
Top pancake with 1 TBSP sugar free fruit preserves and a fruit salad.
