Ingredients

    The veggies:
    3 medium-sized sweet potatoes, peeled and cubed
    2-4 red potatoes, cubed (I leave the skin on these)
    1 cup fresh or frozen corn kernels
    1 15-oz can cannellini beans
    1 15-0z can black beans
    2 (red, yellow, or orange) bell peppers, diced
    1 medium sweet onion, diced
    1/3 cup fresh cilantro, chopped


    Dressing:
    2 cloves garlic, minced
    1/3 cup olive oil
    2 tbsp. rice or cider vinegar
    Juice of one lime (fresh-squeezed, please!)
    1 tbsp. granulated sugar (I use sucranat)
    1/2 tbsp prepared brown mustard
    Worcestershire sauce, to taste (optional)
    Kosher salt, to taste

Directions

Steam or boil the cubed potatoes until tender but not soft. Drain, rinse under water, and transfer to large bowl.

Toss potatoes with corn, beans, bell peppers, onion, and cilantro.

To make dressing: whisk together or vigorously shake all ingredients.

Pour over potato mixture, and toss to coat.
