    you will also need ginger (ground or fresh), soy sauce and garlic chili paste which can be found in any grocery store in the thai section.


Cook the rice. While you do this saute all the veggies until they are tender. Seriously, you can really add any veggies you like to this mix. I should have added bamboo shoots, cause i love them!
Once the veggies are tender add the cooked rice, soy sauce, garlice chili paste nd whatever other seasonings you like. Add the chicken stock and let simmer until it is absorbed - keeps it from burning.
then enjoy!
