    1 tbs olive oil
    1.2 ground turkey
    3/4 onion
    1/2 c red bell pepper
    1 clove garlic
    2 tomatoes
    1 cup zucchini
    2 cups cooked brown rice
    4 tbs pesto


Makes 5- 1 cup servings
In pan, add olive oil and turkey over medium heat cook until no longer pink. Add onion, garlic and bell pepper. Cook until soft. Add zucchini and tomatoes. Cook for 1-2 minutes. Add rice and pesto. Cook until warm. Spoon into bell peppers, zucchini or eggplant.
