    4 tbsp Grape Seed Oil
    2 Leeks
    1 cup baby carrots, or diced carrots
    1 cup chopped Onions,
    1 medium Zucchini, baby, cubed
    5 stalk Celery, diced
    2/3 cup Red, Yellow, & Green, peppers, cut in strips
    4 tsp Curry powder
    4 tsp Cumin powder
    1 tsp cinnamon
    2/3 c Red Quinoa, dry
    2 can Broth
    3 Chicken breast, meat only bone/skin removed
    15 oz.can Black Soy Beans Eden Organic ,
    1 tsp Salt,
    1 15 oz coconut milk, light


Makes 10 one cup servings

1. Brown chicken in oil. remove chicken and add onion and leeks and brown.
2. Add broth, carrots and celery. Let simmer 20 min.
3. Add rest of vegetables and chicken, coconut milk and spices and quinoa. Simmer until vegetables are tender and quinoa is cooked.
