Introduction

Great as a filling lunch or light supper. I use deli thins instead of pitas and I use Tastefully Simple taste of india rather than all the other spices. easier for me. Ingredients

    20oz Jenny O Lean ground turkey
    1 tsp ground cumin
    1 tsp tumeric
    black pepper
    4 6 1/2 inch whole wheat pitas
    8 cups fresh spinach
    1 tbsp extra virgin olive oil
    1 tbsp lemon juice
    3 oz non fat greek yogurt
    1 tsp fresh mint chopped
    1 clove garlic minced

Directions

preheat oven to 400 degrees
mix spices with turkey and roll into 1 1/2 inch balls. bake in oven for 20 to 25 minutes or until centers no longer pink.
while meatballs are cooking, mix 3 oz non fat greek yogurt with the garlic and mint, chill until ready for dipping.
heat a saute pan with the evoo and saute the spinach. drizzle with lemon juice. serve all with pitas.
