Introduction

Delicious black bean soup! This could be a great side dish or even the main event! Top it with some plain greek yogurt and a bit of cheese!

This recipe can easily be vegan if you replace the chicken bouillon and water with 2 cups vegetable stock!

Ingredients

    3 cups black beans (I used dry beans that I soaked overnight)
    3/4 cup grated carrot
    3/4 cup chopped bell pepper
    1/2 cup chopped onion
    3 cloves chopped garlic
    1/2 tsp chili powder
    2 tsp ground cumin
    1/4 tsp cayenne
    1 cup canned tomato sauce
    2 cups water
    2 cubes chicken bouillon

Directions

Combine all ingredients in a deep pot. Heat on medium-low to medium for about 25 to 30 minutes, or until onions, peppers, carrot, and garlic are broken down. Use an immersion make the soup as creamy as possible. The skin from the beans and some veggies will remain chunky, but blend to your liking!
