Quick, nutritious meal. Quick, nutritious meal.
Number of Servings: 6


    1 cup rice
    2 cups water
    taco seasoning packet
    2 cups whole corn
    2 cups black beans, canned
    1 sweet bell pepper, red or green, diced
    1 medium onion, diced


Cook rice with water and taco seasoning according to usual directions.
In skillet, combine remaining ingredients and cook together with a bit of oil, until onion is soft. Keep warm until rice is done.
Serve bean mixture over rice. Can be served in a tortilla, and/or with salsa, sour cream, cheddar cheese, etc.
Makes about 6 one-cup servings.

    This morning I added a whipped & griddled egg white to the mix. I wrapped the mixture in a steamed whole wheat soft toco shell. Then hit the road with a healthy handful of Bk'fast. - 2/9/11
