Ingredients

    4 cups cooked whole wheat spaghetti
    5 slices of bacon (1 tbsp grease reserved)
    1 small onion
    2 tablespoons dried parsley
    1/2 Cup grated Parmesan cheese
    3 Large eggs

Directions

cook spaghetti as directed drain and set aside. Brown bacon in skillet, reserve about a tablespoon of bacon grease in skillet. Crumble bacon and set aside. In reserved bacon grease, add chopped onion, saute until soft. Add in drained cooked pasta, and bacon crumbles. Stir to coat pasta lightly. Take off heat. Crack 3 eggs into pasta mixture, and stir and toss constantly until egg has been thoroughly incorporated. Top with parsley, and cheese.
Makes 4 1 cup servings
