Ingredients

    3 chicken breasts, cut in 1 inch strips
    1/3 cup open pit bbq
    8 cups frozen (thawed) southern style hash browns
    1 cup light Hidden Valley ranch dressing
    1/2 cup shredded 2% mild Cheddar cheese
    1 can (10 oz) healthy request cream of chicken soup
    10 whole wheat ritz crackers, crushed
    2 Tbsp imperial margarine

Directions

Mix chicken and bbq in medium bowl. In large bowl stir together potatoes, dressing, cheese, and soup. Spoon into greased 9X13 baking pan. Place chicken strips on top. In small bowl, stir together Ritz and melted margarine. Sprinkle onto chicken. Cover with foil. Bake 30 minutes at 375 degrees. Uncover and bake 25 minutes longer or until chicken at 180 degrees.
