    1 lb. bag lentils
    1/4 cup oil
    1 small onion chopped
    1 carrot, chopped
    1 stalk celery, chopped
    1 tsp. minced garlic
    1 tsp. rosemary
    4 cups chicken broth
    Tomatoes ( for garnish)
    Capers (for garnish)
    Black pepper and parsley to season (optional)


Place lentils in bowl of cool water for 2 hours. In saucepan, place oil, chopped onion, chopped carrot, chopped celery and minced garlic. Cook 20 minutes or till vegetables are tender. Add lentils and rosemary. Cook 2 minutes. Then add 4 cups chicken broth. turn heat down to medium and cook for 30 to 45 minutes. Turn off heat and season to taste with salt. Allow soup to stand for 2 hours to blend the flavors. (Soup is even better the next day). Serve reheated soup with chopped tomatoes, and capers if desired. Season with black pepper and parsley. makes 4 servings.
