    4 tbsp Olive oil
    5 pieces of chicken thigh
    one large onion diced
    3 cloves garlic crushed and diced
    2 15 oz tins of white beans
    2 15 oz tins of diced tomatoes
    one massive bell pepper
    2 cups water
    1.5 tablespoon of coriander
    salt and pepper to taste


In large covered pot add olive oil, saute onion, garlic and pepper. Add chicken to brown, add coriander and heat through but do not burn spice. Add tomatoes, beans and water. Simmer for 90 minutes and add salt and pepper to taste. Often eaten with French bread, optional.
