Number of Servings: 6

Ingredients

    - 1 cup bread WW bread crumbs (About 3 slices whole wheat bread-i used 90 cal slices)
    -1/2 cup finely chopped or ground almonds (i used leftover from making almond milk! nifty!)
    -1/4 cups shredded parmesan cheese
    - 2 tbsp dried parsley
    - 2 tsp garlic
    - 1 tsp salt
    - 1/4 tsp dried thyme
    - pinch black pepper
    - 1/4 cup extra virgin olive oil
    - 2 1/2 chicken breast, skinless, bones removed


Directions

-Place oil in shallow dish for dipping
- mix first 8 ingredients to make bread crumb mixture
-Pound chicken to 1/2 inch thickness, slice into 12 strips
- dip each slice in oil and dredge in breading mix and place in a baking pan
-bake for 15 minutes
-Serve, Enjoy!

Makes 6 servings, two strips each
