Ingredients

    Non-stick spray coating
    1.25 pounds boneless, skinless chicken breast
    2 medium onions, chopped
    2 cloves garlic, minced
    1.5 cups drained garbanzo beans
    1 14.5 oz. can no salt added tomatoes, whole or diced
    1 8 oz. can no salt added tomato sauce
    1/2 cup of water
    1/2 cup raisins
    2 bay leaves
    6" of stick cinnamon
    1.5 tsp. chili powder
    1/2 tsp. ground ginger
    1 tsp. ground cumin
    4 cups desired fresh vegetables: choose from carrots, celery, zucchini, bell pepper, turnips, cabbage
    1 cup quick cooking, whole wheat couscous






Directions

MAKES 6 SERVINGS

Spray Dutch Oven with non-stick spray.

Cut chicken breast into approx. 2" x 2" chunks.

Peel and chop onions and garlic.

Prepare 4 cups of mixture of any of several vegetables: carrots, celery, yellow or green zucchini, any colored bell peppers, turnips, or cabbage, and cut into 1/2" chunks.

Brown chicken in Dutch oven about 7 minutes.

Turn, adding onions and garlic, and cook 8 minutes more.

Mix in garbanzo beans, tomatoes, water, raisins, spices and vegetables.

Bring mixture to boil. Cover and simmer for 30 minutes.

Meanwhile, stir couscous into one cup boiling water. Then let stand for 3-4 minutes. When ready to serve, fluff with a fork.

Serve chicken vegetable mixture over mounds of couscous.
