Ingredients

8 No Boil Lasagna Noodles
1 c. Classico Roasted Red Pepper Alfredo Sauce
1/4 c. Skim Milk
1/2 med. onion
3 cloves garlic
1/2 c. , chopped
1/4 lb scallops, chopped
1/4 lb shrimp, chopped
1 pkg frozen spinach, thawed
Directions
Preheat Oven to 350*
Spray 8x8 baking dish with non-fat cooking spray.
In fry pan sautee onion, garlic add shrimp and scallops, cook until shrimp start to turn pink, add white wine.
In a seperate bowl, combine spinach, carrots, 3/4 cup ricotta, and most of parmesean cheese.
Remove shrimp/scallops from fry pan combine with remaining ricotta.
Add alfredo sauce and skim milk fry pan, let sauce thicken slightly.
Layering---place 1/4 sauce in baking dish, 2 noodles, sauce, 1/2 spinach mixture, 2 noodles, seafood, 2 noodles, 1/2 spinach mixture, sauce, 2 noodles, top with remaining sauce and parmesean cheese.
Cover with Foil and bake for 30 mins, remove foil and bake for another 15 mins.
Serves 4
