A yummy comfort food that won't break the calorie bank. Would be good with a salad or just have two servings! I found this recipe on the Hungry Girl site, but modified it a little. Ingredients

Ore Ida Steam & Mash Russet Potatoes, Green Giant Broccoli, Cauliflower and Carrots in Cheese Sauce, MorningStar Farms Meal Starters Soy Crumbles and a little chicken stock.
Directions
Preheat oven to 400 degrees.
Microwave the green giant veggies, then the steam and mash potatoes.
Whole those are cooking, Spray an 8"x8" glass dish with cooking spray, then sprinkle the soy crumbles around the bottom.
When the veggies are cooked, evenly pour those on top of the crumbles, then mash the potatoes (I added a little garlic powder and pepper) with the chicken stock and spread those evenly over the vegetable layer.
Place in the oven and cook for about 20 minutes until the bottom is a little bubbly and the edges of the potatoes are just turning golden brown.
