Ingredients

2 Tbs yeast, 2 Tbs salt, 2/3 c. honey,1/2 c vital wheat gluten, 3 Tbs dough enhancer 2/3 c. extra lite olive oil, 2.5 c. wheat flour, 6 c. white bread flour, 3.5c. spelt flour, 1 c oat flour, 1 c whole grain barley flour, 1 c milled flax seed, 1/2 c. water, 5 c. hot tap water
Directions
mix yeast and 1/2 c. water sprinkled with 1/4 tsp sugar.
mix salt, ground flax, vital wheat gluten, dough enhancer, half the flour together. next add hot tap water and oil and honey. After well mixed add remaining flour and need in mixer for 6 minutes. Devide into 4 loaves and let rise 25-30 minutes. place in oven pre heated to 425 for 6 minutes. Reduce heat to 350 and bake an additional 16 minues.
