    1/4 cup sugar (omit?)
    1/2 cup packed brown sugar
    1/2 cup butter, room temperature
    1/2 cup (heaping) of peanut butter
    1 egg
    1 1/3 cup flour
    3/4 tsp baking soda
    1/2 tsp baking powder
    1/4 tsp salt
    1/4 tsp vanilla extract


Cream the butter for 2 mins. Add the sugars and cream another 2 mins. Mix in PB, egg, and vanilla. Mix dry ingredients in separate bowl. Stir into wet mixture.

Wrap dough in saran wrap and refrigerate at least 1-3 hours.

Preheat oven to 325 degrees. Shape dough into 1 inch balls. Place about 3 inches apart on cookie sheet. Flatten in criss cross patter with a fork, or with meat tenderizer. Bake until light brown, 15-16 mins. Cool on baking sheet for 1 min. Transfer to rack to cool completely.
