A nice sweet alternative to the normal blueberries. :) A nice sweet alternative to the normal blueberries. :)
Number of Servings: 8


    1 c. skim milk
    1/4 c. applesauce, unsweetened
    1 t. vanilla extract
    1 c. whole wheat flour
    2 t. sugar
    2 1/2 t. baking powder
    1 egg white
    2 T. light butter (I used Country Crock Light Spread)
    1/2 t. salt
    1 t. cinnamon
    20 raspberries (broken in halves)


Combine all ingredients together and whisk till smooth. Ladle onto to a 325 degrees griddle. Turn after 2-3 minutes. Cook for additional 1-2 minutes. Serve with a small bowl of real maple syrup on the side instead of pouring it on. You use far less, but you can afford to splurge for the real thing. Enjoy!
