Ingredients

    6 organic egg whites
    1 tbsp organic cinnamon
    2 packets Stevia (or ½ tsp. pure 100% Stevia powder, equal to 4 tsp sugar)
    1 tsp organic alcohol-free vanilla

Directions

Combine all ingredients in a blender and blend on medium for 30-45 seconds. Mixture should be frothy like batter. Heat a skillet and spray olive oil non-stick cooking spray on top. Pour egg white mixture into pan and cook on medium for 1 minute or until top is hard. Flip and cook an additional minute.

Notes:

* USE COOKING SPRAY! Mine stuck to the pan without it. It also took much longer to cook.
* This fills the entire skillet, it is very large!
* Served with 1 T pure maple syrup, cut up banana and berries (maple syrup adds 50 cal, 13g carbs/sugar)
* Very filling!
