A bran muffin that even the kids will enjoy!! Seriously! A bran muffin that even the kids will enjoy!! Seriously!
Number of Servings: 13


    1/2 c vegetable oil
    3/4 c brown sugar
    1 egg
    1 c flour
    1 tsp baking soda
    1c sour milk (or buttermilk or yogourt)
    11/2c wheat bran (not flakes)
    2 cups blueberries (for serious blueberry lovers)


Whisk together the oil, brown sugar and egg until smooth. In another bowl, combine the flour with the baking soda. Add the flour mixture to the egg mixture in 2 or 3 portions, alternating with the milk (or yogourt), striing until everything is evenly moistened. Stir in the bran and blueberries.

Spoon batter into 12 large muffin cups. If not using paper muffin cups, spray the tray with pam. Bake at 375F for 20-25 minutes or until a toothpick comes out clean.
