    3 eggs
    2 cups of sugar (I used a mix of sun crystals and splenda as seen above)
    1 cup vegetable oil
    1 tbsp vanilla
    2 cups zucchini (shredded)
    2 cups whole wheat flour
    1 tbsp cinnamon
    2 tsp baking soda
    1 tsp salt
    1/4 baking powder
    1/2 cup nuts (I used walnuts)


Beat eggs until frothy, add sugar, oil and vanilaa, stir misture until thick and lemon colored. Stir zucchini (loosely packed and coarsely grated) Sift together the flour cinnamon baking soda salt and baking powder. Add dry ingredients to the wet mixture. Fold in walnuts. Grease pan and bake at 350 for an hour, sometimes less sometimes more, depending on bread pan.
