    1 tbsp olive oil
    2 medium onions, chopped
    1 tbsp minced garlic
    16 oz raw, sliced mushrooms
    18 oz Bistro Sensation Habanero w/ Monterey Jack Cheese Chicken Sausage, sliced into bite-sized chunks
    10 oz fresh spinach
    1.5 cups uncooked arborio rice
    4 cups chicken broth
    1 cup water
    6 wedges Laughing Cow light creamy swiss cheese


Saute onions, garlic, mushrooms, spinach and chicken sausage until onions and mushrooms are soft. Add rice and continue cooking on high for 1-2 minutes while stirring. Add chicken broth and water one cup at a time, stirring constantly over medium to medium-high heat, until all liquid is absorbed. Mix in laughing cow cheese. Makes 11 1-cup servings.
