Number of Servings: 6

Ingredients

    2 cups flour
    3 teaspoons baking powder
    1/2 teaspoon salt
    3 eggs, separated
    3 1/2 tablespoons Splenda
    1 3/4 cups skim milk
    1/4 cup unsweetened applesauce

Directions

Mix dry ingredients thoroughly. Add Splenda to stiffly beaten egg whites and beat until mixture stands in soft peaks. Beat egg yolks; add milk and shortening; pour into flour mixture. Beat until smooth. Fold in egg whites. Using 1/2 cup batter for each waffle, bake in hot waffle iron. Serve with syrup.
Makes six 7-inch waffles.
Note: Leftover waffles may be wrapped and frozen. When needed, unwrap and heat in toaster.
