Assemble early in the day and then throw it in the oven before dinner. Nice with some bread to mop up some of the sauce. Ingredients

    4 Tbs good olive oilm divided
    1 1/2 cups medium-diced fennel
    1 Tbs garlic, three cloves minced)
    1/4 cup dry white wine
    1 (14.5 oz) can diced tomatoes, no salt
    2 tsp tomato paste
    1 tsp dried oregano
    1 Tbs Pernod
    1 tsp kosher salt
    1/2 tsp freshly ground black jpepper
    1 pound shrimp, jpeeled witgh tails on
    5 oz good quality feta, coarsely crumbled
    1 cup bread crumbs made with 4 slices of bread
    3 Tbs minced fresh parsley
    1 tsp grated lemon zest
    2 lemons


Directions

Preheat the oven to 400

Heat 2 Tbs of olive oil in a 10 or 12 inch heavy oven-proof skillet over medium-low heat. Add the fennel and saute for 8 to 10 minutes, until the fennel is tender. Add the garlic and cook for one minute. Add the wine, birng to boil, scrape up any brown bits, and cook for 2 to 3 minutes to reduce liquid by half. Add the tomatoes with the liquid, tomato paste, oregano, pernod, salt and pepper to the skillet. Simmer over medium-low heat, stirring occasionally, for 10 to 15 minutes.

Arrange shrimp, tails up, in one layer over tomato mixture in skillet, Scatter feta evenly over the shrimp. In a small bowl, combine bread crumbs, parsley, lemon zest, and 2 Tbs of oil. Sprinkle over shrimp

Bake for 15 minutes till shrimp are cooked, and bread crumbs golden brown. Squeeze the juice of one lemon over shrimp and serve wedges on the side.
