Introduction

Number of Servings: 4

Ingredients

    4 salmon filets (4-5 oz each)
    1 tbs vegetable oil
    1/2 tsp cumin
    1 15-oz can black beans (drained)
    1 15-oz can corn kernels (drained)
    1 tbs lime juice
    1/2 c mild salsa (I use mango peach salsa)
    2 tbs butter (I use Country Crock spread)

Directions

Heat oven to 375 F. Spray a foil-lined baking sheet with vegetable cooking spray. Place salmon filets on prepared baking sheet. Cook in oven until salmon is firm to touch (about 10-minutes per 1-inch thickness).

Meanwhile, heat oil in a medium saucepan. Add cumin and cook 1 minute. Stir in black beans and corn. Cook to heat through. Stir in lime juice.

In a small bowl, combine salsa and butter. Microwave for 1 minute, or until butter melts. Spoon sauce over salmon filets.
