    2 organic brown eggs
    1/2 cup skim or nonfat milk
    1 packet Idahoan instant mashed potatoes, prepared


Prepare instant mashed potatoes according to package directions.

Beat together eggs, milk, and salt. Whisk in prepared mashed potatoes.

Pour 1/4 cupfuls onto preheated griddle or skillet at medium high heat (about 400 degrees). Cook 2-5 minutes per side, flipping pancake style when golden brown.
