Ingredients

    1lb Spinich
    .5 oz garlic
    pinch nutmeg
    pinch salt
    pinch pepper
    1 sm onion ( sliced)
    1 cup mozzarella
    2 tomatoes (sliced)
    1 cup romano

Directions

cook spinach, drain, chop. mix spinach, ricotta, garlic, nutmeg, salt and pepper.spread half mixture in baking dish. layer with half the onions,mozzarella, and tomatoe. repeat. sprinkle with parmesan cheese. bake at 325f in convection oven for 30 min or until 140f
makes 2-3 servings
