A fresh key lime taste in a low sugar snack! A fresh key lime taste in a low sugar snack!

    3.5 tsp Key Lime Juice, Nellie & Joe's Key West
    4 oz Cream Cheese
    2 Tbsp Coconut Flour
    1 tsp Stevia in the raw granular


Soften Cream Cheese.
Add coconut flour, mix well and let sit for 5 minutes.
Fold in lime juice.
Mix stevia in the raw in 1/4 tsp increments until blended thoroughly.
Cool until firm to the touch.
Use 1 Tbsp melon baller to scoop and fling onto tinfoil.
Roll into round truffle shape.
Eat at cool temps.
Store in freezer - when pulling from freezer, let warm a bit to bring closer to refrigerated temperature. The key lime flavors seem stronger when you let them warm a few minutes.
