Ingredients

    1 tsp olive oil
    1 small onion, diced
    2 clove garlic, chopped
    2 tbsp no-salt-added tomato paste
    1 tsp sugar
    1 tsp thyme
    1 bay leaf
    2 cans (14.5 oz) no-salt-added diced tomatoes, incl juice
    1/4 c unsweetened almond milk (or skim milk)

Directions

Heat olive oil in medium saucepan; cook garlic and onion until soft (about 5 min). Add tomato paste, sugar, thyme, bay leaf, tomatoes, milk and 2 c water. Stir together, bring to a boil . Reduce heat and simmer for approx 20 min.

Remove bay leaf. Puree / blend until smooth (cool before blending).

Serve w a dollop of non-fat plain Greek yogurt if you choose (not incl in recipe caloric count)
