    Preheat oven to 375F. Spray 12 muffin cups, nonstick or metallic. In a small bowl, stir together beans, corn and chiles. Spoon 1 tbsp of mix into each muffin cup. Divide shredded cheese between cups. Whisk together eggs, sour cream, cilantro, cumin, salt, and pepper. Place muffin pan on centre rack and back for 20-25 minutes. Let cool for a few minutes before removing from cup. Can be stored in fridge and re-heated in microwave.
