    3 Tbsp. butter
    3 cloves garlic, diced
    1 onion (optional), diced
    1 bag frozen spinach (10 oz.)
    3 cups cooked brown rice
    6 large eggs
    1/2 cup milk
    1/4 cup shredded cheddar cheese
    4 T. parmesan cheese


Saute onion and garlic in butter. Add frozen spinach and stir, simmering until soft. Add 3 cups of cooked brown rice. Beat 6 eggs with 1/2 cup milk, salt and pepper. Mix with spinach and rice. Add cheddar and parmesan, mix thoroughly.

Pour into well greased (spray with olive oil or Pam) 9 x 13 pan and bake for 30-35 minutes at 350 degrees, until browned.
