Introduction

This is my quick fix for Brazilian black beans; though not made from scratch, they satisfy my hunger for Brazilian food :) I love making a meal of rice, black beans, and stir fried collards (chove)! Ingredients

    3.5 c canned black beans (2 15 oz cans)
    1 med onion diced
    1/2 tsp diced garlic
    1 Tbs light olive oil

Directions

Saute' the onion in the oil, then add garlic; after a few minutes, when flavors are well blended, add canned beans and a bay leaf broken in half. Bring to simmer on med heat, then simmer on low for 20-30 min, stirring a few times to keep beans from burning. You may crush/smash some of the beans before simmering to get a thicker "gravy". Take out the bay leaf and serve over rice.
