Ingredients

    3 corn tortillas
    1 1/2 oz quesa fresco
    3 oz diced pork tenderloin
    3 T reduced fat sour cream
    1 green ortega chile, finely minced
    1 tsp dried minced onions, ground

Directions

Heat skillet. Spray with nonstick spray. Add diced pork, chile and onion powder. Cook until pork is no longer pink inside, and starting to brown on the edges.
Heat oil in heavy skillet, add tortillas, cooking until just warmed through.
Serve with 1 oz pork in each tortilla, topped with 1/2 oz quesa fresco and 1 T sour cream.
