    1 Potato, shredded
    2/3rds c Broccoli pieces, thawed & excess water removed
    Egg, fresh, 6 large
    3 oz Sargento Reduced Fat Mexican Cheese
    Salt, .5 tsp
    Pepper, black, .25 tsp
    PAM spray


preheat oven to 400

spray pam into 6 muffin tin, press shredded potato onto bottom and sides. Bake for approx 20 minutes

Meanwhile mix together egg, S&P. Once eggs have come together, add in cheese and stir in.

Once potato crusts have baked, put thawed broccoli at bottom of cup, and top with egg & cheese mixture. Reduce oven to 350 and bake for 30 minutes.

Makes 1 cup per serving, 6 servings.

NOTE - next time I would either leave out the potato crust, or cook for longer.
