Introduction

Ingredients

    One package Soyrizo
    3 Yukon Gold potatoes, diced
    2 Tbsp Taco Sauce
    1 Cup cooked rice
    1/4 cup corn
    1/4 spinach (the last three ingredients were leftovers from a previous meal - make 1/2 cup rice and add corn and spinach)
    1 Can red beans, well rinsed (actual sodium is much lower)
    1 Can Swanson Chicken Broth (with 40% less sodium and no MSG)
    1 Cup shredded cheese

Directions

Cook potatoes partially in the chicken broth, until the broth is almost gone. Add soyrizo and sautee a bit longer, adding water if it gets too thick. Then add all the rest of the ingredients and mix well. Bake in a 400 degree oven for at least 30 minutes, or until the potatoes are done.
