    1 lb ground turkey
    2 organic eggs
    1/2 8oz pkg reduced fat Sharp Cheddar Cheese
    3 cloves of garlic minced
    1/2 cup medium Salsa
    1 16oz frozen mixed vegetables
    3 russet potatoes, sliced in thin round pieces
    1/2 cup chopped onion
    1 cup non fat milk


Microwave sliced potatoes until almost completely cooked.

In skillet, spray with mist of olive oil, brown minced garlic and chopped onion. Add ground turkey until cooked. Add frozen mixed vegetables and salsa, cook until hot.

Spread mixture in 9x13" baking pan, layer potatoes on top, sprinkle with shredded cheese.

Whisk together the eggs and milk, pour evenly over the top.

Bake at 350 for a half hour or until the cheese is melted and slightly browned

Remove from oven and let set for 10 minutes before serving
