Introduction

Easy dish- very healthy- and quick to make. Great to tak to someone sick, or as housewarming...or anywhere you need a fast casserole that travels well. Easy dish- very healthy- and quick to make. Great to tak to someone sick, or as housewarming...or anywhere you need a fast casserole that travels well.
Number of Servings: 4

Ingredients

    6 pattys Jenny-O Turkey Sausage patties(2 patties per serving)
    2 leeks- chopped and washed well(both white & Green parts)
    1 cup thin sliced carrots
    2 cloves garlic- chopped
    1/2 cup dry white wine
    15oz can diced tomatoes with liquid
    15oz white beans( like Canneli) rinsed well
    1/4 teas salt and 1/4 teas pepper
    1 cup Panko breadcrumbs
    2 Tbls olive oil


Directions

Preheat oven to 375

Cook sausage in large pot breaking up into pieces. WHen brown add 1 Tbls oil, leeks, carrots and garlic. Cook stirring until soft.( about 5-6 minutes)

Add wine and cook 2 minutes stirring

Add beans & tomato - bring to a boil and cook 1 minute.

Transfer to casserole dish. Mix bread crumbs with remaining oil and saly & Pepper. Top bean leek mixture with Crumbs.

Bake 3o minutes- until golden brown and bubbling.

Makes 4 generous servings.
