Number of Servings: 6


    1 C Refried Beans
    1 C Black Beans
    1/4 C Fat Free Cream Cheese
    6 oz. Chicken
    4 White Corn Tortilla
    2 oz. 2% Cheddar Cheese
    1 can Green Enchilada Sauce
    Chopped Cilantro (to your liking)
    1/4 to 1/2 C. Medium Salsa
    Taco Seasoning or Cumin/Chili Powder/Garlic Salt


1. Place 2 Corn Tortillas on the bottom of the dish.
2. Mix the Refried Beans with the Fat Free Cream Cheese. If you want add crushed garlic and garlic salt to taste.
3. Spread this mixture in a layer on top of the corn tortillas.
4. Shred the chicken, sprinkle salt and cumin on the chicken and mix it. Spread the chicken over the refried bean mixture.
5. Mix the Black Beans, Cilantro, Salsa together. Add crushed/minced garlic, cumin and garlic salt to taste. Spread mixture over chicken.
6. Place remaining corn tortillas on top. Pour entire enchilada sauce over the top.
7. Put lid on covered baker. Place in microwave (on high) for 18min.
8. 5 min before the casserole is done, sprinkle chopped green onions on top of enchilada sauce. Place back in microwave and continue cooking.
9. Once done cooking, sprinkle cheese on top. Replace lid and let casserole sit for 1 min.
10. When serving smother with green salsa, chopped tomatoes, lettuce and a squeeze of lime.
